Roasted Broccoli with Halloumi and Chickpeas: A Burst of Flavour and Nutrition!

Are you ready to elevate your broccoli game? Broccoli may not always be the star of the dinner table, but it's packed with detoxifying properties and antioxidants to boost your well-being. In this recipe, we're giving this veggie a vibrant twist that will satisfy your taste buds and nourish your body.

INGREDIENTS (2 PORTIONS):


400g tin chickpeas

Spice mix:

½ tsp cinnamon,

½ tsp smoked paprika (or sweet or chili flakes),

½ tsp cumin

1 orange (zest and juice)

Olive oil

3 tbsp tahini

1 block halloumi (250g)

250g broccoli, broken into florets and blanched briefly

3 tomatoes

1 large handful pumpkin seeds


To garnish (optional):

Seeds from 1/2 pomegranate

1 small bunch cilantro, leaves picked


PREPARATION:


Preheat the oven to 220C (200C fan).


Spread the chickpeas on a large roasting tray and sprinkle with the spice mix. Add the zest and juice of half the orange, drizzle with olive oil, and season. Roast for 10 minutes.


Meanwhile, score the top of the halloumi block with 5mm-deep criss-crosses and set aside.


In a bowl or jar, mix the tahini, remaining orange zest and juice, and a tablespoon of olive oil. If the tahini is thick, give it a good stir.


After 10 minutes, remove the chickpeas from the oven and switch on the grill. Add the halloumi, broccoli, and pumpkin seeds to the tray. Toss everything together, ensuring it is coated in the orangey spiced oil.


Place under the grill for 10 minutes, until the halloumi turns golden, the broccoli spears soften, and the florets become crisp.
