  • 1 liter (4 cups) vegetable or chicken broth

  • 450 g (3 cups) frozen peas

  • 150 g Gorgonzola cheese

  • 1/2 cup milk (optional)


Instructions:


  1. Sauté the Aromatics: Heat the butter and olive oil in a large pot over medium heat. Add the diced onion and sliced garlic, cooking until softened and fragrant, about 3–4 minutes.


  2. Cook the Broccoli: Add the broccoli florets to the pot and sauté for another 2–3 minutes to enhance their flavor.


  3. Simmer the Broth: Pour in the hot broth and bring it to a boil. Reduce the heat and simmer uncovered for about 5 minutes, or until the broccoli is tender but still vibrant green.


  4. Add the Peas: While the broccoli cooks, rinse the frozen peas under hot water to thaw slightly. Add them to the pot, bring everything back to a boil, and simmer for 2 more minutes.


  5. Blend and Add Gorgonzola: Remove the pot from the heat. Blend the soup with an immersion blender, adding the Gorgonzola as you go. Blend until smooth and the cheese is fully melted. If the soup feels too thick, stir in a bit of milk to adjust the consistency.


  6. Serve: Season with freshly ground black pepper and serve immediately. Pair it with some crusty bread or a simple side salad for a complete meal.
