Easy Comfort Soup Recipe: Sweet Potato and Lentil Soup for Chilly Days

soup with sweet potato, lime and cilantro

As the cooler days of autumn and winter roll in, one of my go-to recipes is this hearty Sweet Potato and Lentil Soup. It’s one of those comforting dishes that I find myself returning to year after year. Not only is it packed with flavor, but it’s also very satisfying and can be ready in under 30 minutes—a total win for busy weeknights!

What I love most about this soup is how the mix of spices gives it a rich flavor with a slight kick. The warming spices create a cozy feeling, perfect for chilly evenings. The addition of lime juice adds just the right amount of acidity, balancing the flavors beautifully. It’s the kind of soup that wraps you up in warmth and comfort.

Nutritional Boost: What's in Your Soup

As we transition into the cooler months, there’s nothing quite like a warm bowl of soup to nourish your body and lift your spirits. Soups are perfect for this season because they offer comfort and warmth, helping to fend off the chill in the air. Plus, they’re an excellent way to incorporate a variety of ingredients, ensuring you get a range of nutrients in one delicious meal.

When it comes to this Sweet Potato and Lentil Soup, the health benefits are abundant:

  • Sweet Potato: This vibrant vegetable is rich in vitamins A and C, essential for supporting your immune system during cold and flu season. It’s also high in fiber, promoting healthy digestion and keeping you feeling full and satisfied.

  • Red Lentils: Packed with protein and fiber, lentils are a fantastic addition to any soup. They help stabilize blood sugar levels and provide lasting energy. Plus, they’re loaded with iron, which is important for maintaining energy levels and preventing fatigue.

  • The Power of Spices: The spices in this soup, including cumin and turmeric, not only add warmth and flavor but also bring health benefits. Turmeric is known for its anti-inflammatory properties, while cumin aids digestion. Using spices in your cooking is a great way to enhance flavor while boosting the nutritional value of your meals.

Simple Ways to Meet Your Protein Needs

This soup is super adaptable when it comes to adding protein. Here are a few easy options depending on your diet:

  1. Chicken: Original recipe includes chicken breast, and if you eat meat, this will be perfect for a lean, rich protein source.

  2. Tofu: If you’re plant-based, silken or smoked tofu is a perfect swap for chicken, soaking up the soup's flavors.

  3. Lentils: Double the amount of lentils for extra protein while keeping it hearty and filling.

  4. Beans: Red beans or black beans also work great, adding both protein and texture.

Choose whichever option fits your diet best, and enjoy a more filling, protein-rich soup!

Prep Tips

Like any good soup or stew, this Sweet Potato and Lentil Soup is even better the day after you make it. The flavors have a chance to meld together, making it even more delicious. It also stores well in the fridge for a few days, so you can enjoy it for lunch or dinner throughout the week. If you want to make a larger batch, this soup freezes beautifully. Just let it cool completely, then transfer it to an airtight container for easy reheating later.

Easy Sweet Potato and Lentil Soup Recipe

Now that we’ve set the stage, let’s dive into making this delicious soup!

Ingredients (Serves 2-3):

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 300 g sweet potato (about 1/2 large), peeled and diced

  • 1/3 cup red lentils, rinsed

  • 1 liter of vegetable or chicken broth

  • 1 chicken breast, diced (optional; can be replaced with tofu or omitted)

  • 1/4 cup heavy cream (or coconut milk)

Spices:

  • 1/2 teaspoon each of ground cumin, sweet paprika, hot paprika, turmeric, dried oregano, coriander

  • salt and pepper to taste

Method:

Prep the Ingredients: Start by peeling and dicing the sweet potato and chopping the onion. Mince the garlic.

Sauté the Vegetables: In a pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until softened. Stir in the minced garlic and sauté for another minute.

Add Sweet Potato and Lentils: Add the diced sweet potato and rinsed lentils to the pot. Stir everything together, coating it in the oil and aromatics.

Season and Add Broth: Pour in the broth and add the spices. If you're using chicken, add the diced chicken breast at this point. Bring the mixture to a boil.

Simmer: Once boiling, reduce the heat and let it simmer for about 15 minutes or until the sweet potato and lentils are tender. Once ready, take off the hot plate and stir in the heavy cream (or coconut milk) for added creaminess.

Ladle the soup into bowls, garnish with fresh herbs, a squeeze of lime juice and some extra chilli pepper for extra flavor.
