1 tablespoon olive oil

2 garlic cloves, minced
300 g sweet potato (about 1/2 large), peeled and diced
1/3 cup red lentils, rinsed
1 liter of vegetable or chicken broth
1 chicken breast, diced (optional; can be replaced with tofu or omitted)
1/4 cup heavy cream (or coconut milk)
Spices:
1/2 teaspoon each of ground cumin, sweet paprika, hot paprika, turmeric, dried oregano, coriander
salt and pepper to taste
Method:
Prep the Ingredients: Start by peeling and dicing the sweet potato and chopping the onion. Mince the garlic.
Sauté the Vegetables: In a pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until softened. Stir in the minced garlic and sauté for another minute.
Add Sweet Potato and Lentils: Add the diced sweet potato and rinsed lentils to the pot. Stir everything together, coating it in the oil and aromatics.
Season and Add Broth: Pour in the broth and add the spices. If you're using chicken, add the diced chicken breast at this point. Bring the mixture to a boil.
