INGREDIENTS (2 PORTIONS):
1 tsp harissa mixed with 1.5 tsp olive oil
2 tbsp olive oil
15g butter
0.5 medium onion, diced
2 garlic cloves, finely chopped
1 leek, sliced
150g green asparagus, chopped
(swap for thinly sliced Brussels sprouts in winter season)
1 zucchini, grated
½ chilli, sliced
60g baby spinach
1-2 tbsp lemon juice
4 fresh eggs
Spices: ¾ tsp cumin, ¾ tsp coriander, ¼ tsp pepper, ½ tsp salt

DIRECTIONS:
Prepare the Base: Mix harissa with olive oil. Prep your veggies: dice the onion, finely chop the garlic, slice the leek, and grate the zucchini.
Cook the Veggies: In a sauté pan, heat olive oil and butter. Sauté the leek until tender, then add onion until translucent. Stir in garlic, chilli, and spices for a fragrant touch.
Assemble the Shakshuka: Toss in the asparagus for a quick cook, followed by the zucchini. Add spinach until it wilts, then season with salt and lemon juice to enhance the flavors.
Egg-cellent Finishing: Flatten the greens, make wells, and crack an egg into each. Cover and cook to your egg preference.
