Cucumber, Chickpea, Corn and Feta Salad
Ingredients (Serves 4):
1 can (400g) chickpeas, drained and rinsed
2 English cucumbers, finely diced
1 small can (150g) corn
a small bunch (approx. 15g) finely chopped fresh mint
1/2 red onion, finely diced
Juice from 1 lemon
2 tbsp olive oil
1 tsp balsamic vinegar (for sweetness)
1/2 tsp sea salt (or more to taste)
1/2 tsp ground black pepper
1 block (200g) feta, crumbled
Preparation:
In a medium-sized bowl, combine all ingredients except for the feta. Toss well to mix.
Add the crumbled feta and toss again.
