Cucumber, Chickpea, Corn and Feta Salad
Ingredients (Serves 4):
- 1 can (400g) chickpeas, drained and rinsed 
- 2 English cucumbers, finely diced 
- 1 small can (150g) corn 
- a small bunch (approx. 15g) finely chopped fresh mint 
- 1/2 red onion, finely diced 
- Juice from 1 lemon 
- 2 tbsp olive oil 
- 1 tsp balsamic vinegar (for sweetness) 
- 1/2 tsp sea salt (or more to taste) 
- 1/2 tsp ground black pepper 
- 1 block (200g) feta, crumbled 
Preparation:
- In a medium-sized bowl, combine all ingredients except for the feta. Toss well to mix. 
- Add the crumbled feta and toss again. 
- Taste and adjust the seasoning, adding more lemon juice, olive oil, or feta to your preference. 
- Enjoy immediately for the best flavor. If not serving right away, consider using a slotted spoon to reduce excess liquid from the cucumbers.
