Cauliflower Steak Recipe


Ingredients (Serves 2-3):

 

1 cauliflower

1 tsp smoked paprika

2 tbsp olive oil + 1 tbsp ghee

Salt and freshly ground black pepper


Yogurt Sauce:

 

1 cup Greek yogurt

1 handful of fresh mint, finely chopped

2 tsp lemon juice

2 tsp capers


Roasted Pepper Salsa:

 

1 roasted red pepper (from a jar)

6 pitted black olives

Small handful of coriander, chopped

1 tbsp capers

½ tbsp red wine vinegar


Green Tahini Sauce:

 

80g tahini

1½ tbsp lemon juice

½ garlic clove, crushed

70ml water


Instructions:

 

Preheat the Oven: Heat your oven to 220°C (200°C fan).


Prepare the Cauliflower: Slice the cauliflower into two 2 cm-thick steaks using the middle part (save the rest for another time). Brush the steaks with 1 tbsp olive oil, rub with smoked paprika, and season with salt and pepper.


Sear the Cauliflower: Heat 1 tbsp olive oil and 1 tbsp ghee in a large skillet over medium-high heat. Add the cauliflower steaks and cook for about 10 minutes on each side until golden brown.


Roast: Transfer the seared cauliflower steaks to a baking tray and roast for 15-20 minutes until fully cooked through.


Prepare the Sauce of Your Choice:


Yogurt Sauce: Mix the Greek yogurt, chopped mint, lemon juice, and capers.


Roasted Pepper Salsa: Chop the roasted red pepper, black olives, and coriander, then mix with capers, remaining oil, and vinegar.


Green Tahini Sauce: Whisk together tahini, lemon juice, crushed garlic, water, and a pinch of salt until smooth.


Serve the roasted cauliflower steaks on a plate and serve with your chosen sauce and garnishes.
